Winter Weather is here! Quick dumplings with our mixes!
Winter weather is hitting the country and nothing is better than coming home to a quick warm and tasty soup with dumplings. We love to use our mixes for biscuits but they also make a tasty and satisfying dumpling for your favorite soup or stew.
Here's the recipe for one of our household favorites: Quick Chicken Soup with Dumplings
What you'll need:
1 tbsp olive or sunflower oil
1-2 cartons or cans of low sodium Chicken Broth
1/2 GF Rotisserie chicken (We usually have it warm one day then use the leftover meat for this soup) picked off the bone and diced
3-4 Carrots diced or slices or whichever way fits in your spoon best
1/2 sweet onion diced
1 clove garlic minced
2 tsp dried basil
1 tsp black pepper
Salt to taste
1 bag Herb Biscuit Mix (It works with any of the biscuit mixes you can find Here
In a Dutch oven or saucepan heat oil over medium heat then add onion, garlic and carrots. Season with salt and black pepper. Sautee until onion is translucent and the carrots are starting to get tender. Add chicken and heat for two minutes. Add chicken broth and water to completely cover. Bring to a simmer. While the soup is heating prepare mix as directed. Divide in two and bake half as directed. Once the soup is simmering drop mix into soup by the teaspoonful and boil uncovered for 3-4 minutes, turn dumpling and cover for an additional 5-6 minutes or until tender. Serve hot!
