Becca's Gluten-Free Pancake and Waffle mix is a great morning treat or ‘breakfast for dinner’ classic. Weekend breakfasts are when we pull out the waffle iron or the pancake griddle. With a touch of high-quality cinnamon you can use this thin on the griddle for pancakes or a bit thicker for crispy on the outside soft in the middle waffles. This is also a "dump and stir mix" and can be made dairy and egg-free. We prefer the waffles and this mix works with the classic iron and a Belgium waffle maker. You can even freeze the leftovers for fast weekday morning breakfasts.
